why are lists so freaking readable?

I actually sat down for a sec to think this through. Theory: the fact that their contents come with an alleged structure automatically reduces the cognitive work of organizing--and therefore inerpreting and analyzing--those contents. And knowing that some of that work is already done before any reading has happened might make the act of reading seem more "affordable" =)
